Chicken Alfredo 

This is one of the quickest, simplest pasta dish I have made! I didn’t know what to make for lunch tomrrow so made this to take to work 🙂

Ingredients:

  1. Flat pasta, I used tagliatelle pasta,
  2. Chicken breast,
  3. Salt,
  4. Lemon,
  5. Pepper,
  6. Double cream,
  7. Parmesan cheese,
  8. Mixed herbs,
  9. Garlic,
  10. Green chilli,
  11. Any veg you want, I used broccoli but mushroom is the one to be used with this,
  12. Oil and
  13. Butter.

First, marinade the small chicken breast pieces with salt, pepper and lemon- for at least 25 minutes. 

Then I put the pasta in a pot and let it boil on one side.


Then, I got around 2 tablespoons of butter, let it melt in a pan. Then I added my fresh grated garlic ( I crushed 3 cloves), let it turn slightly brown then add the cream. Add as much as you want depending on how saucy you want you dish to be. Let it simmer on low heat for around 5 minutes till it turns a bit thick. 

Then I added the cheese, add as much as you like, stir this in slowly and let it melt. 

Add some mixed herbs or anything you want you don’t have to! I like my food a bit spicey so added crushed green chillies to the mixture too. 

Stir that in and let it simmer for two minutes and that’s your sauce ready!

On the other side, in a pot add some oil and add your chicken and let it cook until the water from chicken has evaporated. I added my broccoli in too so it’s ready in time. I didn’t have time to wait around! 

Once the above is done, add it the sauce. 

Add your pasta and hooray there’s your chicken alfredo ready 🙂 enjoy with garlic bread. 

Dhanak Deira Bolton

If you’re ever near Bolton and want halal Chinese with a twist of Indian flavours then this is the place to go, it’s just before the Asda on Blackburn road on your right. I thought I’d give it a go since I kept seeing Amir Khan uploading snap chats whilst he was there. Yes, the first thing that comes to your mind is ‘oh it’s going to be expensive’ it’s actually quite reasonable not overly priced at all.

Apart from the food, I love this wall decor with the Arabic calligraphy, something I’ve not seen at a restaurant before!

I love the interiors of this place, it wasn’t  busy when we went, it was nice and quite and even it was busy, it wouldn’t be an issue because it’s quite spacious inside, so you’re not clashing with the people sat next to you. You could go here for any occasion and make it special. All the tables were nicely laid out with napkins, candles and a rose.

The staff were nice and friendly, which is always a bonus. We were in a rush so the waiter tried to bring the food for us as soon as possible and even had a laugh with us.

For starters we ordered popadums, Fish Pakoras and Kebabs. I’m not really fond of Fish Pakoras so I don’t know how they tasted but friends did say they were nice. The popadums were really oily  but when my friends husband asked for some tissue to wipe the oil away, the waitress went and got some more. So all happy bellies!

For the mains we ordered Chicken Manchurian with noodles and Lamb Karahi with I think it was Tandoor roti or naan. The Manchurian tasted really nice, it was spicey so if you don’t like your food spicey I suggest you ask them to change the heat for you.

The mocktails were slightly pricey compared to other restaurants I’ve been to, even Zouk’s is a tad cheaper but they tasted nice so not moaning. You can ask them to change the ingredients to them, I know we did for the tropical daiquiri. They happily did this for us.

I would defiantly go there again and thanks to the friendly staff for the nice time there, and not forgetting the waiter that gave me lolly in the end incase I cried because my friends daughter got one and I didn’t 😂

Alberts Schloss

This was a last minute lunch venue.

I didn’t ask if anything was halal I just assumed it wasn’t because it was a bar. So I stuck to the usual things I would be able to eat, along with the alcohol free drink.

The atmosphere was lovely, the waitress who was with us was really nice and friendly. Loved walking in from the cold air to a nice table round a fire, the heat felt nice.

Would definitely recommend going to eat at this bar.

We ordered a From the brunch section of the menu. First we had Eggs Royals, it tasted amazing considering I have had this at moose’s cafe before. This was way better than the one I have tried there. Served with smoked salmon, poached eggs with hollandaise sauce, lemon, capers, dill on a toasted muffin.

Then we ordered a Brioche French Toast. It was a bit tangy but I guess that was the taste of all the forest berries coulis. This was served with whipped vanilla ricotta and wild flower honey.

Half Moons

I love this savoury snack served with sauces. My aunt passed this recipe on to me from a South African cook book.

Ingredients;

Chicken breast diced,

1/2 tsp Cumin Powder,

1 tsp Salt,

1/4 cup Lemon juice,

Green chillies,

1 tsp crushed Garlic,

2 tbsp Mayonnaise,

2 tbsp butter,

sweetcorn,

Pepper,

diced potaotes

2 beaten eggs,

breadcrumbs and

cornflour.

Dough:

2 cups water,

2 tbsp butter,

1/4 tsp salt and

2 cups plain flour or more.

Method:

Combine chicken, cumin, salt, lemon juice, pepper garlic, mayonnaise, butter, corn and pepper in a pot. Let it cook over medium heat until dry ( when there is no water left from chicken).

Mix the cornflour and milk together in a pot. It will feel hard but this is fine as long as there a no lumps.

Add this to the chicken and stir over medium heat until thick and saucy. Allow to cool.

Place the water, butter and salt in a pot over heat and bring to boil. I kept this lukewarm as you need to knead the dough.

In in a big dish I added the flour, we used 3.5 cups of plain flour. Add the above water mixture and knead. That’s the cup I used for all measurements.

 

Roll the dough out thinly on a floured surface. Cut in to circle shapes or make them in shapes of small puris.

 

 

 

 

 

Place a spoonful of the filling on to one half of the circle or in the middle depends how you prefer to do this. Life up and press edges together to seal, forming a half moon shape.  My mum did this part as I am useless.

 

Dip the pies in the beaten egg and then breadcrumbs.

You may now freeze them. Or fry them until golden brown.

Healthy protein flapjacks

This was an experiment and loved the outcome.I had enough of partner spending £2+ a day for a small bar from the shops everyday and I’m trying to eat healthy at the moment and craving sweet things and not eating it, is a struggle. So I decided to make healthy flapjacks. I tried it the first time round without any maple syrup, which made the flapjack really crumbly. The second time round I added maple syrup, just a bit to get the stickiness. Also the second time round I forgot to add almond butter, which means adding less syrup! I used rolled oats first time which made the texture very powdery, so used jumbo oats which helped a lot.

I have mixed the pictures below from first and second time, forgot to take picture with honey etc inside the bowl second time round because I was missing my gym class. 🙈😥

Also don’t have exact measurements because it’s up to you, how many nuts you want inside it, how healthy you want to be, how much protein you want etc.

Ingredients 

Jumbo rolled oats-sainsbury Scottish ones were the ones I used.

Chia seeds

Flaxseed -I purchased Linwood milled organic flaxseed sunflower and pumpkin seed. It’s really good as it’s all powder and easy to use and can’t even taste it that much but at least you’re getting your omega into your diet.

Protein powder- I used vanilla flavour,this is optional.

Almonds and pistachios-my mum has a jar of these all thinly sliced, so thought why not.

Cinnamon powder

Maple Syrup- Canadian maple syrup if possible can be found in Waiterose and Sainsbury

Lucy bee coconut oil

Honey, try to use Manuka if possible.

Almond butter

Milk

METHOD

I used around half a packed of the oats, 3 scoops of protein powder, the other dry ingredients I used according to my taste. I’m not fond of nuts in food so I put less in. Put all the dry ingredients in a bowl.

Mix everything properly so it’s evenly distributed.

Once everything is mixed thoroughly, on the other side get a small pot add around 7 tablespoons of the coconut oil and on low heat let it melt.

One the oil has melted pour on to the dry ingredients and add all the wet ingredients. Don’t add too much maple syrup if you’re trying to be healthy. Add more of the almond butter around 4-5 tablespoons. Honey around 2-3 tablespoons. Syrup I’d say around 4-6 tablespoons, if you’ve used almond butter I’d only put in 3. Just see how the texture is once you’ve mixed it, if you think it’s not sticky enough add more oil and butter or honey but not syrup. I added around 4 tablespoons of milk.

Yes, I had to use my hands to mix the above. This is the best option so you don’t have too much syrup or honey in one of your bites. You need it all to mixed properly and with a spoon I noticed the dry ingredients stayed at the bottom of the bowl. So use your hands my lovelies 🙂 ( this was from the first time I tried)

Once everything is mixed and you’re happy with your mixture, get a tray, add greaseproof paper and put the mixture into the tray. Flatten the top with a spoon so it’s not uneven.

Put in the oven at 180° for 15 minutes only. The sides will look like its burnt but don’t  worry it’s not and you can’t even taste it.( I added chopped dates on my side of the share because I was too lazy to half the mixture and mix it in)

If you want to treat yourself, melt some dark chocolate in the microwave and drizzle on top. Voila 😀

Potato Vada

I love eating these once in a while such a Indian street food snack. It’s so quick and simple to make. Sorry couldn’t take decent pictures of the outcome it was for guests and we were in a rush.

Ingredients;

Potatoes

Green chilli as much as you like

Coriander

Oil

Gram flour

Ginger and Garlic paste

Bicarbonate of Soda

Salt

Tumeric powder

Black Mustard Seeds

Lemon

Peel skin of potatoes and cut them into four pieces. Alternatively you can boil your potatoes like you to make mash.

Once they are boiled, drain the water and put them in a plate. Add salt, Tumeric powder, green chilli as much as you like, ginger garlic paste, squeeze some lemon juice for a nice tangy taste and mix all this well with your hands. (I’ve not specified the amounts of spices as this differs to each person, how chilly/salty, how yellow you want it etc)

In a separate pan, Asians will defiantly have this little dish we use to ‘wager’ the mustard seeds. I don’t know what it means in English but all you have to is put some oil in a pan let it heat up for around two minutes then add your seeds. Make sure it is on low heat before you add the seeds because it will splatter everywhere, hence I couldn’t take a picture of the seeds in oil.once you have done that pour it onto the potato mixture.

Mash the potatoes and other ingredients properly so everything is nicely mixed. Chop the coriander into small pieces and add that to the mash too and mix well. Roll them into small balls.

In a bowl get some gram flour, add some salt, red chilli powder just a pinch and bicarbonate of soda. Add lukewarm water to the dry ingridents and make it into a nice thick mixture.

Dip one mash ball individually into the flour mixture and then put into a medium pan with hot oil and let it cook till the flour is golden brown.

Serve with chilli sauce . Enjoy

Date and Walnut cake

I love my aunts cake and walnut cake, but was never given the recipe. So I made this from another aunts recipe and oh my gawddd it tastes lovely. I love dates, not a fan of nuts so next time I’ll make my own little cake without nuts and a separate one for family.

Ingredients;

310ml boiling water

14 dates you can have more it’s up to you

walnuts or any nuts you prefer

1tsp bicarbonate of soda

125g butter

I put in 250g castor sugar thinking the dates will make it sweet, but it was fine not that sweet.

1 egg

1tsp vanilla essence

1 tsp baking powder

300g plain flour

2 tablespoon milk

Put the boiling water into a pan

Add the bicarbonate of soda to the water.

Chop the dates into small pieces or quarters. Chop the nuts too make sure they are not too small otherwise they will sink to the bottom of the cake.

Add the nuts and dates to the water. Leave the water on the stove on low heat, VERY low heat.

Cream the butter and sugar well. I’m still old fashioned prefer creaming it with a spoon than a mixer, I think it makes it more fluffier when doing it by hand. Each to their own.

Add the egg, baking powder, milk and vanilla essence. Mix everything well for a minute.

Add flour and mix well. Yes it will look like dough don’t worry and DONT add another egg, I was going to do that thinking it’s not like batter. I kneaded the dough so everything was mixed well and no flour was left out.

Add the date and nut mixture to the dough. Stir until the ingredients are mixed with the dough evenly.

Pour the mixture into a greased tin and put in the oven for 25 minutes at 200°c.

 

 

 

 

 

 

 

 

S’mores

So, I decided to try s’mores at home, but since I’m the only child at home and parents don’t like anything baked/made that has sweets/chocolates in it, I have to make small portions. I didn’t want to put a few mallows in the oven for 20 minutes I wanted to eat it straight away, no patience for food sometimes. 🙈 The traditional way to enjoy smores is over a campfire when your camping with friends. I guess it would give a nice bbq taste.

You need a few simple things, marshmallows, biscuits, chocolate and skewers.

The halal marshmallows I buy, are the sweet zone branded ones, which can be found in any Asian shops and Asda in the world food section.

I turned the stove on, I would recommend keeping it on medium. Got three marshmallows and added them on to my bamboo skewer I found in the draws.

I held the skewer over the hob for 10-20 seconds. But the marshmallows were on fire 😂 so I had to blow the flames of the mallows, but it actually gave it the nice BBQ taste, which I didn’t mind. The second time round I literally waved it over the flame beacause I didn’t want it to on fire again, this worked.

Be careful they melt pretty fast and cam start falling off the stick.

The plainest biscuit in the kitchen I wanted to try this with was rich tea. So I got two rich tea biscuits, kept one on plate and with the other biscuit I took the hot,melted mallows of the skewer. It is very sticky so used the other biscuit to keep hands clean, it works. You can use any biscuit you want to.

I added boost chocolate bites on top. You can use any chocolate you want. Maybe in drizzle some raspberry sauce over it and add some sprinkles?

Archies Shakes and Burgers

I love this place, I blame uni life for this. It was right opposite my campus so I used to go there few times in a month 🙈. They have a few branches across UK, I go to the one on Oxford road opposite MMU All Saints Campus.

This place gets an all thumbs up for me. It can be busy at times and queues can be long, the longest I’ve had to wait for my food is 15 minutes. In summer I love their shakes 😍

it’s all about the million dollar shake, ferroe rocher, strawberries and cream. The pics below are from the 29th December 2015, didn’t know I would blog a review for this so my burger picture isn’t all that.

I loved the lady that served us she explained all the burgers properly to me, they’ve changed the menu 😓 and it’s been a while since I last visited Archies.

I always get the usual cheese burger with curly fries. Partner got chicken burger with Cheetos, doesn’t sound nice but it tasted really nice the Cheetos crisps gave a nice kick to the burger. He also got sweet potato fries, I’m not a fan of sweet potatoes but apparently according to him they were nice.

They’ve introduced this new thing called shake, dip and go I think that’s right. Basically you choose any milkshake, you get a 1/4 of a waffle for 99p extra and you dip it in your shake and eat. I love waffles so had to give this a go.

Chapati and Karak

Hey my lovelies
This is my review for the above when I went on a day trip to London. I’ve been here once before. I love the chai and roti perfect little snack. I think it’s a parantha.

This is on Brompton Road,a two minute walk from harrods. I went there in summer with my friend, it’s lovely everyone was sat outside having tea. It was busy but they have a 30 minute rule for each table which is good I think as it gets busy.

A simple menu; variety of chai and chapati to choose from.  

We opted for cardamom chai and Mint tea with a cheddar chapati and plain chapati with Nutella.


Mint tea was really nice even though it doesn’t look all that.


My lovely chai. I love it so much! Nice and strong flavours. Perfect for the cold weather.


This is the cheddar chapati. Yes sorry I put Nutella on it by mistake and was wasted 🙈 I didn’t like this as much as the plain ones with cheese or Nutella. Partner liked it though. Guess each to their own.

This picture is from summer. When me and my friend we ordered plain with cheese spread and a sugar one which is the flat open one. They were both lovely.


You may think I’m mad haha but I’ve made this the toilet stop to go to, I won’t go anywhere and go here because it’s so nice and clean. Has the fountain thing in place of a lota, the toilet tissue is nice like home and not some cheap recycled tissue. Hand wash is nice and even has some lotion there!
